Kirari Yanagiba Sashimi Filleting Knife
Our Kirari Yanagiba stainless steel 8-12 inch filleting knife is used to slice raw fish for sashimi and sushi. This knife is available in a left and right-handed version.
The name Yanagiba or Yanagi ba literally translates as ‘willow blade’. This describes the flexible nature of the long, narrow blade which adheres to the Japanese tradition of only being sharp on one side.
The sashimi knife is also known as a Sashimi Bocho.
This steel-bladed sashimi knife is a key piece of equipment for Japanese chefs – particularly those with an interest in sushi and sashimi.
- Blade made from German crafted 70Cr15MoV stainless steel.
- The beautiful handles are made from rosewood Wenge Millettia Leucantha for long-term use to prevent deformation, shrinkage and fading.
